Ingredients
Crust:
- 1 cup almond meal
- 1/2 cup coconut flour
- 1/2 cup flaxmeal or ground flax seeds
- 1 teaspoon sea salt
- 6 tablespoons coconut oil, melted
- 1/2 teaspoon cinnamon powder
- 2 tablespoons pure maple syrup
Filling:
- 1 can pure pumpkin puree preferably organic
- 1/2 cup full-fat coconut milk
- 2 teaspoons pumpkin pie spice mix
- 3/4 teaspoon sea salt
- 1/4 cup honey

Instructions
- Crust
- 1. Preheat the oven to 425F 2. Grease pie pan with coconut oil 3. Mix all ingredients in a large bowl well 4. Press filling into pie pan and cover edges with foil to prevent burning 5. Cook crust for approx. 10-15 min or until just slightly browned
Filling
- 1. In same bowl, blend all filling ingredients with a hand blender to get mixture nice and smooth. Alternatively, you can use a food processor, but a hand mixer won't do the trick. 2. Filling should be thick. If needed, add a little more coconut milk to think slightly. 3. Scoop filling into pie crust 4. Place into oven and reduce temperature to 350F 5. Bake for approx. 1 hour or until set 6. Cool for 2 hours and serve with whipped coconut milk (full fat).
