1. In same bowl, blend all filling ingredients with a hand blender to get mixture nice and smooth. Alternatively, you can use a food processor, but a hand mixer won’t do the trick.
2. Filling should be thick. If needed, add a little more coconut milk to think slightly.
3. Scoop filling into pie crust
4. Place into oven and reduce temperature to 350F
5. Bake for approx. 1 hour or until set
6. Cool for 2 hours and serve with whipped coconut milk (full fat).
