Instructions
  1. Bake the potatoes until soft. Peel and mash.
  2. In a large bowl, combine the mashed potatoes, coconut oil, eggs, coconut milk, vanilla extract and honey.
  3. Spread mixture into a greased 1-1/2-qt. casserole.
  4. Sprinkle nuts over potatoes.
  5. Bake at 375° for 25 minutes or until a thermometer reads 160°.
