- 2.5 lbs sweet potatos Approx. 4 cups
- 1/4 cup coconut oil
- 2 eggs lightly beaten
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup honey

- 1/2 cup chopped nuts pick your favorite, I like pecans

Instructions
- Bake the potatoes until soft. Peel and mash.
- In a large bowl, combine the mashed potatoes, coconut oil, eggs, coconut milk, vanilla extract and honey.
- Spread mixture into a greased 1-1/2-qt. casserole.
- Sprinkle nuts over potatoes.
- Bake at 375° for 25 minutes or until a thermometer reads 160°.
