coconut milk

vanilla extract

Topping

pick your favorite, I like pecans
Instructions
Bake the potatoes until soft. Peel and mash.
In a large bowl, combine the mashed potatoes, coconut oil, eggs, coconut milk, vanilla extract and honey.
Spread mixture into a greased 1-1/2-qt. casserole.
Sprinkle nuts over potatoes.
Bake at 375° for 25 minutes or until a thermometer reads 160°.
