Mexican Cauliflower Rice

Ingredients
- 2 heads cauliflower riced
- 1 tbsp pure olive oil
- 1 small onion finely diced
- 1 red tomato diced
- 1 tomatillo diced
- 1 Red pepper diced
- 1 jalapeno, seeds and membrane removed minced
- 3 garlic cloves minced
- 1 1/2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 tsp salt
- 1/4 tsp red pepper flakes
Ingredients to top:
- 1/2 avocado sliced
- 1/2 cup corn
- 1/2 cup black beans cooked
- fresh cilantro

Instructions
- Heat oil in a pan and add onions, tomatoes, tomatillos, peppers and jalapeno and sauté for 3 minutes, stirring often.
- Add garlic and cauliflower, sauté until the cauliflower rice becomes tender.
- Mix in the remaining ingredients and cook for 1 minute or until heated through.
- Top with corn, beans, and avocados. Garnish with cilantro.
