MEXICAN CAULIFLOWER RICE

jalapeno, seeds and membrane removed

Ingredients to top:

avocado
sliced
1/2
cup
corn
1/2
cup
black beans
cooked
fresh cilantro
Instructions
Heat oil in a pan and add onions, tomatoes, tomatillos, peppers and jalapeno and sauté for 3 minutes, stirring often.
Add garlic and cauliflower, sauté until the cauliflower rice becomes tender.
Mix in the remaining ingredients and cook for 1 minute or until heated through.
Top with corn, beans, and avocados. Garnish with cilantro.
