
TOMATILLO SALSA VERDE

Ingredients
- 5 tomatillos
- 1/2 cup sweet onion chopped
- 1 tsp minced garlic
- 1 guajillo chili pepper minced
- 3 tbsp chopped cilantro
- 1 tbsp epazote (Mexican oregano - a pungent herb used in Latin American cooking) chopped
- 1/2 tsp ground cumin
- 1 1/2 tsp salt to taste
- 2 cups water

Instructions
- Place tomatillos, onion, garlic, and chili pepper into a saucepan. Season with herbs and spices and add 2 cups water.
- Bring to a boil and reduce to a simmer until the tomatillos are soft. This will take about 15-20 minutes.
- Blend the softened mixture with an immersion blender until the desired level of smoothness is reached.
