Quinoa Avocado Toast Recipe: A Healthy Alternative
This recipe for Quinoa Avocado Toast was also inspired from a Next and Glow recipe and video. First, a simple quinoa batter is prepared and bake to create a hearty toast. Then, pieces are topped with mashed avocado and other veggies. These quinoa avocado toasts have been a hit with many of my guests.

Ingredients
- 3/4 cup quinoa, soaked in water for about 30 minutes and drained
- 1/2 tsp baking soda
- 1/4 tsp salt (can double this if desired)
- 1/4 tsp cayenne pepper scant
- 1-2 tsp fresh herbs, finely chopped (optional but I loved it with thyme or rosemary)
- 1/2 cup water

Instructions
- Soak the quinoa (at least 20 minutes) and drain
- Add the quinoa and other ingredients into a blender and blend until smoothe. The little NutriBullet type blenders work well for this. I use my Vitamix, taking care to blend slowly at first.
- Line an 8 inch square pan with parchment paper and pour in the quinoa batter.
- Bake in the pan at 450F for 20 to 25 minutes (depending on the thickness), then remove the flatbread from the pan and bake on a sheet for 10 – 15 more minutes until desired ‘crispness is achieved’.
- When cool, add the toppings, slice and enjoy!
Recipe Notes
If you do not have time to make the quinoa bread, simply use romaine leaves! Romaine leaves are a staple in our home. I use them in place of bread, tortillas and bagels for a gluten-free alternative.
