Cauliflower Steak on Greens

Ingredients
- 1 head of cauliflower
- 2 tbsp olive oil
- fresh ground pepper
- 1/8 tsp of salt
- 1 tbsp fresh parsley chopped
- 1/8 tsp coriander
- 1 lb of broccolini
- 2 tbsp coconut oil
- 2 garlic cloves crushed
- 1/4 cup chestnuts chopped

Instructions
- Preheat the oven to 350 degrees.
- Cut your cauliflower head into steaks by slicing crosswise. Cut all the way through the cauliflower head into 1-inch Reserve any trimmings of florets for future use.
- Prepare a baking sheet and arrange your steaks on the sheet. Drizzle with olive oil and season with salt, pepper, coriander and parsley.
- Roast for 15 mins.
- Bring a pot of water to a boil and cook your broccolini until it is al dente. Transfer to a bowl of ice cold water to halt the cooking process.
- Heat 2 tablespoons of coconut oil in a pan and lightly sauté your crushed garlic. Add your broccolini and chopped chestnuts to the pan and remove from heat.
- Serve the cauliflower steaks with your greens and enjoy!
Recipe Notes
* For a decadent twist, create a cream sauce by making a roux of 1 tablespoon of oil, 1 tablespoon of flour, chili flakes, and ½ cup of coconut milk. Whisk together and serve on your cauliflower steaks.
